Description

This Chicken Cordon Bleu Meatloaf is a cozy, cheesy twist on a classic. Juicy ground chicken is rolled with smoky Black Forest ham and melty Swiss cheese, baked to golden perfection, and finished with a creamy Dijon-Parmesan sauce. It’s hearty, family-friendly comfort food that feels a little fancy but is easy enough for any weeknight.

Ingredients

Scale

For the Meatloaf:

  • 2 lbs ground chicken

  • 1/2 small yellow onion, finely diced

  • 3 cloves garlic, minced

  • 1 large egg, beaten

  • 1 tablespoon Dijon mustard

  • 1/2 cup parmesan cheese, finely grated

  • 2 tablespoons fresh parsley, chopped

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 cup panko breadcrumbs, divided

  • 6 slices Black Forest ham

  • 6 slices Swiss cheese

  • 2 tablespoons melted butter

For the Sauce:

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 1 1/2 cups milk

  • 2 tablespoons Dijon mustard

  • 1/3 cup parmesan cheese, finely grated

  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F. Grease a loaf pan with butter or nonstick spray.

  2. In a medium bowl, mix ground chicken, onion, garlic, egg, Dijon, parmesan, parsley, salt, pepper, and 1/4 cup breadcrumbs using your hands until well combined.

  3. On a piece of parchment or wax paper, flatten the chicken mixture into an 8×12-inch rectangle.

  4. Layer ham slices over the meat, then top with Swiss cheese slices.

  5. Using the parchment to help, gently roll the meat into a log from the short end. Transfer to the loaf pan, seam-side down, and remove the paper.

  6. Mix the remaining breadcrumbs with melted butter and a pinch of salt. Sprinkle over the top.

  7. Bake for about 75 minutes, or until the internal temperature reaches 165°F.

  8. Let the meatloaf rest while you make the sauce.

  9. For the sauce, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Slowly whisk in milk and cook until thickened (about 3 minutes).

  10. Stir in Dijon and parmesan until melted and smooth. Season with salt and pepper.

  11. Slice meatloaf and serve with warm sauce spooned over the top. Enjoy!

Notes

You can use ground turkey if you prefer or if chicken isn’t available.
The sauce can be made ahead and reheated gently before serving.
Leftovers are delicious cold or rewarmed, especially in sandwiches!
Use parchment paper when rolling the meatloaf to keep it neat and mess-free.
