Description

This Chicken Cobbler Biscuit Dinner is a comforting one-pan wonder layered with juicy rotisserie chicken, mixed vegetables, cheesy biscuit topping, and a creamy sauce. It’s a no-fuss family favorite that’s golden, bubbly, and perfect for cozy weeknights.


Ingredients

  • ½ cup butter (1 stick, melted)

  • 4 cups shredded rotisserie chicken

  • 1 (12 oz) bag frozen mixed vegetables

  • 1 (11.36 oz) box Red Lobster Cheddar Bay Biscuit Mix (including seasoning packet)

  • 2 cups whole milk

  • 1 (14.5 oz) can chicken broth

  • 1 (10.5 oz) can cream of chicken soup

  • Garlic powder (to taste)

  • Onion powder (to taste)

  • Black pepper (to taste)


Instructions

  1. Preheat oven to 375°F. Grease a 9×13 baking dish.

  2. Pour melted butter evenly into the bottom of the dish.

  3. Spread shredded chicken in a single layer over the butter.

  4. Distribute frozen mixed vegetables evenly over the chicken.

  5. Sprinkle garlic powder, onion powder, and black pepper to taste.

  6. In a medium bowl, whisk together milk, Cheddar Bay Biscuit Mix, and seasoning packet. Pour over the chicken and veggies. Do not stir.

  7. In the same bowl, whisk together cream of chicken soup and chicken broth. Pour over the biscuit mix layer. Do not stir.

  8. Bake uncovered on the center rack for 55–65 minutes, or until golden and bubbly.

  9. Let rest for 10 minutes before serving to allow the sauce to thicken.

Notes

Don’t stir the layers—this creates the delicious cobbler-like texture.
You can substitute fresh veggies, just ensure they’re finely chopped.
Add shredded cheddar cheese on top during the last 10 minutes of baking for extra gooey goodness.
