Ingredients

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 small head of green cabbage, cored and chopped
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat oil in a pot; sauté onion until soft.
  • Add garlic, cook 1 minute.
  • Stir in carrots, celery; cook 5 minutes.
  • Add cabbage and broth; bring to boil, simmer 15 minutes.
  • Stir in chicken, thyme, bay leaf; season with salt and pepper. Simmer 10 minutes.
  • Remove bay leaf, garnish with parsley, and serve.
