- 1 medium onion, finely chopped

- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 small head of green cabbage, cored and chopped
- 6 cups chicken broth
- 2 cups cooked chicken, shredded or diced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat oil in a pot; sauté onion until soft.
- Add garlic, cook 1 minute.
- Stir in carrots, celery; cook 5 minutes.
- Add cabbage and broth; bring to boil, simmer 15 minutes.
- Stir in chicken, thyme, bay leaf; season with salt and pepper. Simmer 10 minutes.
- Remove bay leaf, garnish with parsley, and serve.
