Ingredients
For the Salsa:
1 Roma tomato, diced
½ small red onion, diced
1 tablespoon chopped fresh cilantro
1 lime, juiced
½ teaspoon ground black pepper
For the Chicken Burgers:
1 lb ground chicken
½ cup panko bread crumbs
1 large egg
½ small red onion, diced
1 tablespoon chopped fresh cilantro
1 teaspoon red pepper flakes
1 teaspoon garlic powder
½ teaspoon paprika
4 slices Swiss cheese
For the Bang-Bang Sauce:
⅓ cup mayo
3 tablespoons sweet chili sauce
1 teaspoon Frank’s Red Hot
1 teaspoon crushed garlic
1 teaspoon salt
For Serving:
4 romaine lettuce leaves
4 onion buns
Olive oil or butter, for toasting buns
Instructions
Make the Salsa: In a small bowl, mix tomato, red onion, cilantro, lime juice, and pepper. Set aside.
Prepare Chicken Patties: In a large bowl, mix ground chicken, panko, egg, onion, cilantro, red pepper flakes, garlic powder, and paprika. Divide and form into 4 patties, about ½-inch thick.
Make Bang-Bang Sauce: In a separate bowl, whisk together mayo, sweet chili sauce, Frank’s Red Hot, garlic, and salt. Set aside.
Cook Patties: Heat a grill pan over medium-high heat. Lightly spray with non-stick spray. Cook patties for 4 minutes, flip, cook 2 more minutes, add cheese slices, and cook another 2 minutes or until internal temp reaches 165°F.
Toast Buns: Lightly brush buns with olive oil or butter and toast in the pan until golden brown.
Assemble: Layer a lettuce leaf, chicken patty, and salsa on the bottom bun. Spread Bang-Bang Sauce on the top bun, place on top, and serve immediately.
Notes
Add sliced pickles or red onion for extra crunch.
Swap Swiss cheese with pepper jack for more heat.
