Chicken Marinade:

  • 1 lb boneless chicken breast, sliced

  • 1 teaspoon cornstarch

  • ¼ cup light soy sauce

  • 1 teaspoon sesame oil

  • 1 tablespoon rice wine vinegar

  • 2 teaspoons honey

  • 3 garlic cloves, crushed

Stir Fry:

  • 1 tablespoon cooking oil

  • 8 ounces snow peas

  • 1 tablespoon oyster sauce

  • 1 teaspoon black pepper (optional)

  • Salt to taste


Instructions

  1. Slice chicken breast into thin strips.

  2. In a mixing bowl, combine chicken, cornstarch, soy sauce, sesame oil, rice wine vinegar, honey, and garlic. Mix well and marinate for at least 30 minutes (or up to overnight in the fridge).

  3. Heat 1 tablespoon cooking oil in a wok or large skillet over medium-high heat. Add garlic and sauté for about 1 minute.

  4. Add marinated chicken along with marinade sauce. Stir fry for about 2 minutes until chicken is no longer translucent. Remove chicken from the pan and set aside, keeping sauce in the pan if possible.

  5. Add a little more oil if needed. Stir fry snow peas for 3-5 minutes until bright green and tender-crisp.

  6. Return chicken to the pan. Add oyster sauce, black pepper, and salt. Stir fry for another 1-2 minutes until chicken is fully cooked and sauce coats everything.

  7. Remove from heat and serve immediately over rice, noodles, or on its own.

Notes

Slice chicken thinly for quicker cooking and tenderness.
Adjust sauce thickness by adding a splash of chicken broth if desired.
Red pepper flakes or chili sauce can be added for a spicy kick.
Fresh snow peas work best, but frozen can be used if thawed and patted dry.
Leftovers keep in the fridge for up to 3 days.
