This Chicken and Mozzarella Bake is a cheesy, saucy, flavor-packed comfort meal that’s perfect for busy weeknights. Tender chicken breasts bake in a herbed tomato sauce, topped with bubbly mozzarella and finished with fresh basil. It’s easy, delicious, and always a hit at the dinner table!
Ingredients
4 boneless, skinless chicken breasts
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
Salt and black pepper, to taste
16 oz can chopped tomatoes
3 cloves garlic, minced
½ red onion, chopped
1 tsp dried oregano
1 cup shredded mozzarella
2–3 fresh basil leaves, torn
2 tbsp olive oil
Instructions
Preheat your oven to 375°F (190°C).
Rinse and pat dry the chicken breasts. Make shallow criss-cross cuts in the surface to help the flavors seep in.
Place the chicken in a baking dish. Season with salt, pepper, garlic powder, onion powder, and Italian seasoning. Drizzle with olive oil.
In a mixing bowl, combine chopped tomatoes, minced garlic, red onion, oregano, and a pinch of salt and pepper. Mix well.
Pour the tomato mixture over the chicken in the dish, spreading evenly.
Sprinkle shredded mozzarella over the top.
Bake for 25–30 minutes or until the chicken is cooked through and the cheese is bubbly.
For a golden top, broil the last 2–3 minutes—watch carefully!
Garnish with fresh basil leaves before serving.
Notes
Swap mozzarella for provolone or a blend of Italian cheeses.
Add chopped spinach or olives for extra flavor.
Great served over pasta, rice, or crusty bread.
