Description

This Cheddar Bay Biscuit Seafood Pot Pie combines tender shrimp, crab, and flaky fish in a creamy, flavorful sauce topped with buttery Cheddar Bay biscuits. Comfort food with a coastal twist, perfect for weeknight dinners or special occasions.


Ingredients

  • 1 lb shrimp, peeled and deveined

  • 1 lb crab meat (or imitation crab)

  • 1 cup fish fillets (cod or haddock), cut into chunks

  • 1 cup frozen mixed vegetables (peas, carrots, corn)

  • 1 cup heavy cream

  • 2 cups chicken or seafood broth

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried thyme

  • Salt and pepper, to taste

  • 1 package of Cheddar Bay Biscuit mix (includes cheddar cheese & seasoning)

  • ¾ cup milk (for biscuit mix)

  • ¼ cup melted butter (for biscuit topping)


Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a large pot over medium heat, cook shrimp, crab, and fish for 3–4 minutes until shrimp turn pink. Remove and set aside.

  3. In the same pot, add broth, heavy cream, garlic powder, onion powder, thyme, salt, and pepper. Stir and bring to a gentle simmer.

  4. Add frozen mixed vegetables and cooked seafood to the pot. Simmer for 5 minutes until heated through.

  5. Continue stirring for 5 minutes until sauce thickens slightly. Remove from heat.

  6. In a bowl, combine Cheddar Bay Biscuit mix with milk. Stir gently until just combined (do not overmix).

  7. Pour seafood mixture into a large baking dish. Drop spoonfuls of biscuit dough over the top.

  8. Drizzle melted butter over the biscuit topping.

  9. Bake for 25–30 minutes, until biscuits are golden brown.

  10. Let cool for 5–10 minutes before serving.

Notes

For extra cheesy biscuits, add ½ cup shredded cheddar to the dough.
Use fresh seafood for the best flavor, but thawed frozen works well too.
Add a pinch of Old Bay seasoning for extra coastal flavor.
