This Cheddar and Herb Soda Bread is the perfect combination of crispy, golden crust and a soft, cheesy interior. Infused with fresh herbs and sharp cheddar, it’s quick and easy to make, with no yeast required. Perfect for pairing with soups, stews, or enjoying as a snack!
Ingredients
-
4 cups all-purpose flour, plus extra as needed
-
1 ½ tsp baking soda
-
1 tsp salt
-
2 tbsp chopped fresh chives
-
1 tbsp each chopped fresh thyme, rosemary, and sage
-
1 cup shredded cheddar cheese
-
1 ¾ cups buttermilk
Instructions
-
Preheat the oven to 425°F (220°C).
-
In a large mixing bowl, combine the flour, baking soda, and salt. Stir to combine.
-
Add the fresh chopped herbs and shredded cheddar cheese to the flour mixture, then mix well.
-
Pour in the buttermilk and stir until just combined—do not overmix.
-
Turn the dough out onto a lightly floured surface and knead gently until the dough comes together.
-
Shape the dough into a ball and flatten it into a 7-inch round.
-
Place the dough onto a lightly floured baking sheet and score the top with a sharp knife, making a cross about ½ inch deep.
-
Bake for 15 minutes at 425°F, then reduce the heat to 375°F and continue baking for 30-35 minutes. The bread should sound hollow when tapped on the bottom.
-
Let the bread cool wrapped in a tea towel to soften the crust.
Notes
Storage: Store leftover bread in an airtight container at room temperature for up to 2-3 days. Alternatively, slice and freeze it for up to 3 months.
Herb Variations: Feel free to adjust the herbs based on what you have available or prefer. Dried herbs can be substituted, but use half the amount.
For a softer crust: Wrap the bread in a tea towel as it cools to help soften the outer crust.
