Description

This Cheddar and Herb Soda Bread is the perfect combination of crispy, golden crust and a soft, cheesy interior. Infused with fresh herbs and sharp cheddar, it’s quick and easy to make, with no yeast required. Perfect for pairing with soups, stews, or enjoying as a snack!


Ingredients

  • 4 cups all-purpose flour, plus extra as needed

  • 1 ½ tsp baking soda

  • 1 tsp salt

  • 2 tbsp chopped fresh chives

  • 1 tbsp each chopped fresh thyme, rosemary, and sage

  • 1 cup shredded cheddar cheese

  • 1 ¾ cups buttermilk


Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large mixing bowl, combine the flour, baking soda, and salt. Stir to combine.

  3. Add the fresh chopped herbs and shredded cheddar cheese to the flour mixture, then mix well.

  4. Pour in the buttermilk and stir until just combined—do not overmix.

  5. Turn the dough out onto a lightly floured surface and knead gently until the dough comes together.

  6. Shape the dough into a ball and flatten it into a 7-inch round.

  7. Place the dough onto a lightly floured baking sheet and score the top with a sharp knife, making a cross about ½ inch deep.

  8. Bake for 15 minutes at 425°F, then reduce the heat to 375°F and continue baking for 30-35 minutes. The bread should sound hollow when tapped on the bottom.

  9. Let the bread cool wrapped in a tea towel to soften the crust.

Notes

Storage: Store leftover bread in an airtight container at room temperature for up to 2-3 days. Alternatively, slice and freeze it for up to 3 months.
Herb Variations: Feel free to adjust the herbs based on what you have available or prefer. Dried herbs can be substituted, but use half the amount.
For a softer crust: Wrap the bread in a tea towel as it cools to help soften the outer crust.
