For the Cajun Grilled Chicken:

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 1 tablespoon Cajun seasoning

  • 1 teaspoon smoked paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ¼ teaspoon cayenne pepper (adjust to taste)

  • Salt and pepper, to taste

  • 1 tablespoon fresh lemon juice

For the Alabama White Sauce:

  • 1 cup mayonnaise

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon Dijon mustard

  • 1 teaspoon lemon juice

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ¼ teaspoon cayenne pepper

  • Salt and black pepper, to taste

  • 1 tablespoon fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat grill to medium-high heat (around 400°F).

  2. In a small bowl, mix Cajun seasoning, paprika, garlic powder, onion powder, cayenne, salt, and pepper.

  3. Rub chicken breasts with olive oil and coat them with the spice mix. Add lemon juice.

  4. Let marinate for 10–15 minutes while you prepare the sauce.

  5. To make the Alabama white sauce, whisk together mayonnaise, vinegar, Dijon mustard, lemon juice, garlic powder, onion powder, cayenne, salt, and pepper. Refrigerate for 15–20 minutes.

  6. Place chicken on the grill and cook 6–7 minutes per side, or until internal temp reaches 165°F.

  7. Remove from grill and let rest a few minutes.

  8. Serve chicken drizzled with Alabama white sauce or with sauce on the side. Garnish with fresh parsley if desired.

Notes

Want less heat? Cut the cayenne pepper in half in both the chicken and the sauce.
No grill? A grill pan or oven broiler works great as an alternative.
This recipe pairs wonderfully with roasted veggies, corn on the cob, or even a simple green salad.
The Alabama white sauce can be made up to 3–4 days in advance for easy meal prep.
