Ingredients
For the Pasta and Chicken:
12 oz penne or rotini pasta
1 lb chicken breasts, cubed
2 tbsp Cajun seasoning
2 tbsp olive oil
1 medium onion, diced
1 red bell pepper, diced
3 cloves garlic, minced
For the Creamy Sauce:
8 oz cream cheese, softened
1 cup heavy cream
1 cup chicken broth
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
1 tsp paprika
Salt and pepper, to taste
For Garnish (optional):
Fresh parsley, chopped
Instructions
Cook the Pasta: Boil pasta in salted water according to package instructions. Drain and set aside.
Cook the Chicken: Season cubed chicken with Cajun seasoning. Heat olive oil in a skillet and cook chicken until golden and fully cooked. Remove and set aside.
Sauté the Veggies: In the same skillet, cook diced onion and bell pepper for 3–4 minutes. Add garlic and cook 1 minute more.
Make the Sauce: Add cream cheese, heavy cream, and chicken broth. Stir until smooth and creamy. Season with paprika, salt, and pepper.
Combine: Stir in chicken and pasta. Add cheddar and Parmesan until melted into a creamy sauce.
Bake: Transfer mixture to a greased baking dish. Bake at 350°F (175°C) for 15–20 minutes, until bubbly and golden.
Serve: Garnish with parsley and enjoy hot.
Notes
Adjust Cajun seasoning for more or less spice.
