  • 12 oz penne or rotini pasta

  • 1 lb chicken breasts, cubed

  • 2 tbsp Cajun seasoning

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 1 red bell pepper, diced

  • 3 cloves garlic, minced

For the Creamy Sauce:

  • 8 oz cream cheese, softened

  • 1 cup heavy cream

  • 1 cup chicken broth

  • 1 cup shredded cheddar cheese

  • ½ cup grated Parmesan cheese

  • 1 tsp paprika

  • Salt and pepper, to taste

For Garnish (optional):

  • Fresh parsley, chopped


Instructions

  1. Cook the Pasta: Boil pasta in salted water according to package instructions. Drain and set aside.

  2. Cook the Chicken: Season cubed chicken with Cajun seasoning. Heat olive oil in a skillet and cook chicken until golden and fully cooked. Remove and set aside.

  3. Sauté the Veggies: In the same skillet, cook diced onion and bell pepper for 3–4 minutes. Add garlic and cook 1 minute more.

  4. Make the Sauce: Add cream cheese, heavy cream, and chicken broth. Stir until smooth and creamy. Season with paprika, salt, and pepper.

  5. Combine: Stir in chicken and pasta. Add cheddar and Parmesan until melted into a creamy sauce.

  6. Bake: Transfer mixture to a greased baking dish. Bake at 350°F (175°C) for 15–20 minutes, until bubbly and golden.
