  • 4 cups chicken broth
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

 
  1. Make the Roux : In a heavy-bottomed pot, melt the butter over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a deep amber color. This should take about 10–15 minutes.
  2. Sauté the Holy Trinity : Add the onion, bell pepper, and celery to the roux. Cook until softened, about 5 minutes. Toss in the garlic and cook for another minute.
  3. Brown the Chicken : Increase the heat slightly and add the chicken pieces. Cook until browned on all sides.
  4. Combine Everything : Pour in the chicken broth, scraping the bottom of the pot to release any stuck bits. Stir in the cayenne pepper, paprika, thyme, salt, and pepper. Bring to a boil, then reduce to a simmer.
