  • 2 tablespoons olive oil

  • 2 tablespoons Cajun seasoning (adjust to taste)

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces

  • 12 oz fettuccine pasta

  • 3 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • 1½ cups heavy cream

  • 1 cup freshly grated Parmesan cheese

  • Salt & freshly cracked black pepper, to taste

  • ½ cup diced tomatoes or bell peppers (optional)

  • Fresh parsley (optional, for garnish)


Instructions

  1. Cook the Pasta: Boil salted water and cook fettuccine until al dente (9–11 mins). Drain and reserve ½ cup pasta water.

  2. Season the Chicken: Toss chicken pieces in Cajun seasoning.

  3. Sear the Chicken: Heat olive oil in a skillet over medium-high. Cook chicken 4–5 minutes, flipping halfway, until browned and cooked through. Remove and set aside.

  4. Make the Alfredo Sauce: In the same skillet, melt butter. Add garlic and sauté for 30 seconds. Pour in heavy cream and bring to a gentle simmer.

  5. Add Cheese: Slowly whisk in Parmesan until smooth. Season with salt and pepper. Thin with pasta water if needed.

  6. Combine: Return chicken to skillet, add fettuccine, and toss to coat. Let simmer 1–2 minutes to meld flavors.

  7. Serve: Optional—stir in diced tomatoes or peppers, garnish with parsley, and serve hot!

Notes

Use a homemade Cajun seasoning blend if needed (paprika, garlic powder, cayenne, thyme, etc.).
Penne or linguine can be substituted for fettuccine.
To reduce calories, swap heavy cream with half-and-half (results may vary in creaminess).
