Ingredients
Salad
⅔ cup buffalo sauce (or hot sauce)
¼ cup honey
2 tablespoons extra virgin olive oil
2 pounds chicken breasts, cut into cubes
1 tablespoon seasoned salt
Salt and black pepper, to taste
6 cups shredded lettuce
⅓ cup fresh cilantro, chopped
1 cup cherry tomatoes, halved
1 cup grilled corn kernels (about 2 ears)
¼ cup chopped peperoncini
1 cup crumbled blue cheese or cubed cheddar
6 strips cooked bacon, crumbled
1 avocado, chopped
Dressing
½ cup sour cream or plain Greek yogurt
⅓ cup mayonnaise
½ cup pickled jalapeños
⅓ cup fresh cilantro
3 tablespoons fresh basil
2 tablespoons chopped fresh dill
1 teaspoon garlic powder
Salt and black pepper, to taste
Instructions
Marinate the Chicken: In a small bowl, mix the buffalo sauce and honey. In a separate bowl, toss the chicken with olive oil, seasoned salt, and a pinch of pepper. Add ¼ cup of the buffalo-honey sauce and toss to coat well.
Skewer and Grill: Thread the chicken onto skewers. Heat a grill, grill pan, or skillet over medium-high. Grill the skewers for 10–12 minutes, turning occasionally, until charred and cooked through.
Make the Dressing: Blend all dressing ingredients in a blender until smooth and creamy. Adjust salt and pepper to taste.
Assemble the Salad: In a large bowl, toss lettuce, cilantro, tomatoes, corn, and peperoncini with half the dressing. Top with grilled chicken, cheese, bacon, and avocado.
Serve: Drizzle with remaining dressing and extra buffalo-honey sauce if desired. Enjoy!
