  • ⅔ cup buffalo sauce (or hot sauce)

  • ¼ cup honey

  • 2 tablespoons extra virgin olive oil

  • 2 pounds chicken breasts, cut into cubes

  • 1 tablespoon seasoned salt

  • Salt and black pepper, to taste

  • 6 cups shredded lettuce

  • ⅓ cup fresh cilantro, chopped

  • 1 cup cherry tomatoes, halved

  • 1 cup grilled corn kernels (about 2 ears)

  • ¼ cup chopped peperoncini

  • 1 cup crumbled blue cheese or cubed cheddar

  • 6 strips cooked bacon, crumbled

  • 1 avocado, chopped

Dressing

  • ½ cup sour cream or plain Greek yogurt

  • ⅓ cup mayonnaise

  • ½ cup pickled jalapeños

  • ⅓ cup fresh cilantro

  • 3 tablespoons fresh basil

  • 2 tablespoons chopped fresh dill

  • 1 teaspoon garlic powder

  • Salt and black pepper, to taste


Instructions

  1. Marinate the Chicken: In a small bowl, mix the buffalo sauce and honey. In a separate bowl, toss the chicken with olive oil, seasoned salt, and a pinch of pepper. Add ¼ cup of the buffalo-honey sauce and toss to coat well.

  2. Skewer and Grill: Thread the chicken onto skewers. Heat a grill, grill pan, or skillet over medium-high. Grill the skewers for 10–12 minutes, turning occasionally, until charred and cooked through.

  3. Make the Dressing: Blend all dressing ingredients in a blender until smooth and creamy. Adjust salt and pepper to taste.

  4. Assemble the Salad: In a large bowl, toss lettuce, cilantro, tomatoes, corn, and peperoncini with half the dressing. Top with grilled chicken, cheese, bacon, and avocado.

  5. Serve: Drizzle with remaining dressing and extra buffalo-honey sauce if desired. Enjoy!
