Ingredients
For the Chicken:
1 pound boneless and skinless chicken breasts (or thighs), butterflied or pounded thin
1 teaspoon Italian seasoning
Salt and pepper to taste
1 tablespoon olive oil
For the Bruschetta Topping:
2 cups tomatoes, seeded and diced
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
1 clove garlic, minced or grated
2 tablespoons red onion, finely diced
2 tablespoons fresh basil, thinly sliced
Salt and pepper to taste
Instructions
Season chicken with Italian seasoning, salt, and pepper.
Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 3–5 minutes per side, until golden brown and cooked through. Remove from heat and set aside.
In a bowl, combine diced tomatoes, extra virgin olive oil, balsamic vinegar, garlic, red onion, basil, salt, and pepper. Stir gently.
Spoon the bruschetta mixture over the cooked chicken breasts.
Serve immediately with your favorite side—garlic bread, salad, or zucchini noodles!
Notes
Use ripe Roma tomatoes for the best texture and flavor.
Want it extra cheesy? Add mozzarella or shaved parmesan before serving.
