Description

This Bruschetta Chicken Pasta is a fresh and flavorful dinner idea featuring juicy grilled chicken, cherry tomatoes, basil, and penne pasta tossed in a balsamic and olive oil dressing. It’s quick, vibrant, and perfect for busy weeknights or casual entertaining.


Ingredients

  • 2 boneless, skinless chicken breasts, grilled and sliced

  • 1 pound penne pasta

  • 2 cups cherry tomatoes, halved

  • 1/4 cup red onion, finely chopped

  • 3 cloves garlic, minced

  • 1/4 cup fresh basil, chopped

  • 1/4 cup balsamic vinegar

  • 1/3 cup olive oil

  • 1/2 cup grated Parmesan cheese

  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions in salted water. Reserve 1/2 cup of pasta water, then drain and set pasta aside.

  2. Grill chicken with salt and pepper until cooked through. Let rest, then slice into strips.

  3. In a bowl, combine cherry tomatoes, red onion, garlic, basil, balsamic vinegar, olive oil, salt, and pepper. Let sit for 10 minutes.

  4. Toss pasta with bruschetta mixture and grilled chicken in a large pan over low heat. Add reserved pasta water as needed.

  5. Sprinkle with Parmesan cheese, toss gently, and serve warm with extra basil on top if desired.

Notes

  • Leftover rotisserie chicken works great in a pinch.
    Use gluten-free pasta for a GF version.
    Make it spicy with a pinch of red pepper flakes.
