Ingredients

2 boneless, skinless chicken breasts, grilled and sliced

1 pound penne pasta

2 cups cherry tomatoes, halved

1/4 cup red onion, finely chopped

3 cloves garlic, minced

1/4 cup fresh basil, chopped

1/4 cup balsamic vinegar

1/3 cup olive oil

1/2 cup grated Parmesan cheese

Salt and pepper to taste
Instructions

Cook pasta according to package directions in salted water. Reserve 1/2 cup of pasta water, then drain and set pasta aside.

Grill chicken with salt and pepper until cooked through. Let rest, then slice into strips.

In a bowl, combine cherry tomatoes, red onion, garlic, basil, balsamic vinegar, olive oil, salt, and pepper. Let sit for 10 minutes.

Toss pasta with bruschetta mixture and grilled chicken in a large pan over low heat. Add reserved pasta water as needed.

Sprinkle with Parmesan cheese, toss gently, and serve warm with extra basil on top if desired.
