This Bruschetta Chicken Pasta is a fresh and flavorful dinner idea featuring juicy grilled chicken, cherry tomatoes, basil, and penne pasta tossed in a balsamic and olive oil dressing. It’s quick, vibrant, and perfect for busy weeknights or casual entertaining.
Ingredients
2 boneless, skinless chicken breasts, grilled and sliced
1 pound penne pasta
2 cups cherry tomatoes, halved
1/4 cup red onion, finely chopped
3 cloves garlic, minced
1/4 cup fresh basil, chopped
1/4 cup balsamic vinegar
1/3 cup olive oil
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Cook pasta according to package directions in salted water. Reserve 1/2 cup of pasta water, then drain and set pasta aside.
Grill chicken with salt and pepper until cooked through. Let rest, then slice into strips.
In a bowl, combine cherry tomatoes, red onion, garlic, basil, balsamic vinegar, olive oil, salt, and pepper. Let sit for 10 minutes.
Toss pasta with bruschetta mixture and grilled chicken in a large pan over low heat. Add reserved pasta water as needed.
Sprinkle with Parmesan cheese, toss gently, and serve warm with extra basil on top if desired.
Notes
Leftover rotisserie chicken works great in a pinch.
Use gluten-free pasta for a GF version.
Make it spicy with a pinch of red pepper flakes.
