Ingredients
Main Casserole:
4 chicken breasts (about 2 pounds), cut into bite-size pieces (or 3 cups cooked chicken)
1 tablespoon olive oil (only if using raw chicken)
1½–2 pounds broccoli, cut into bite-size florets
1½ cups cheddar cheese, shredded and divided
1 can (10.5 oz) condensed cream of mushroom soup (or cream of chicken)
⅔ cup sour cream
½ cup milk
½ teaspoon each garlic powder, onion powder, dry mustard powder, and black pepper
¼ teaspoon kosher salt
Topping:
3 tablespoons Panko breadcrumbs or crushed buttery crackers (like Ritz)
1 tablespoon melted butter
Instructions
Preheat oven to 400°F and grease a 9×13-inch baking dish.
If using raw chicken, heat olive oil in a skillet over medium-high heat. Cook chicken until browned and cooked through, about 10 minutes. Set aside.
Meanwhile, boil broccoli for 2–3 minutes until just tender-crisp. Drain well and spread evenly in the baking dish.
In a large bowl, mix 1 cup cheddar cheese, soup, sour cream, milk, and all seasonings. Fold in the cooked chicken.
Spread chicken mixture over the broccoli and top with remaining ½ cup cheese.
Combine breadcrumbs (or crackers) with melted butter and sprinkle over the top.
Bake for 20–22 minutes, or until hot and bubbly with a golden topping.
Let cool slightly before serving. Enjoy over rice, noodles, or mashed potatoes!
