Description

Creamy, cheesy, and irresistibly comforting, this Broccoli Chicken Divan is a crowd-pleasing casserole loaded with tender chicken, vibrant broccoli, and a rich sauce—topped with golden breadcrumbs for the perfect weeknight win.

Ingredients

  • Main Casserole:

    •  4 chicken breasts (about 2 pounds), cut into bite-size pieces (or 3 cups cooked chicken)

    •  1 tablespoon olive oil (only if using raw chicken)

    •  1½–2 pounds broccoli, cut into bite-size florets

    •  1½ cups cheddar cheese, shredded and divided

    •  1 can (10.5 oz) condensed cream of mushroom soup (or cream of chicken)

    •  ⅔ cup sour cream

    •  ½ cup milk

    •  ½ teaspoon each garlic powder, onion powder, dry mustard powder, and black pepper

    •  ¼ teaspoon kosher salt

    Topping:

    •  3 tablespoons Panko breadcrumbs or crushed buttery crackers (like Ritz)

    •  1 tablespoon melted butter

Instructions

  1. Preheat oven to 400°F and grease a 9×13-inch baking dish.

  2. If using raw chicken, heat olive oil in a skillet over medium-high heat. Cook chicken until browned and cooked through, about 10 minutes. Set aside.

  3. Meanwhile, boil broccoli for 2–3 minutes until just tender-crisp. Drain well and spread evenly in the baking dish.

  4. In a large bowl, mix 1 cup cheddar cheese, soup, sour cream, milk, and all seasonings. Fold in the cooked chicken.

  5. Spread chicken mixture over the broccoli and top with remaining ½ cup cheese.

  6. Combine breadcrumbs (or crackers) with melted butter and sprinkle over the top.

  7. Bake for 20–22 minutes, or until hot and bubbly with a golden topping.

  8. Let cool slightly before serving. Enjoy over rice, noodles, or mashed potatoes!

Notes

Use rotisserie chicken to save time on busy nights.
Frozen broccoli works too—just thaw and pat dry before using.
Great for make-ahead: Assemble up to 24 hours in advance and bake when ready.
