- 2 cups mixed salad greens
- 1 cup fresh blueberries
- 1/2 cup shelled pistachios (roughly chopped)
- 1/4 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
Dressing
- 1/4 cup extra virgin olive oil
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash salad greens and pat dry. Add to a large bowl.
- Rinse blueberries, remove any stems, and add to the bowl.
- Sprinkle chopped pistachios over the greens.
- Add crumbled feta and sliced red onion.
- In a small bowl, whisk olive oil, honey, balsamic vinegar, Dijon mustard, salt, and pepper until blended.
- Pour dressing over the salad and toss gently to coat.
- Taste and adjust salt/pepper if needed. Serve right away (or chill briefly, then serve).
