Description

This Blackstone Griddle Hibachi Chicken Feast is a sizzling, flavorful dinner packed with tender marinated chicken, veggie-fried rice, and sautéed vegetables. Perfect for backyard cookouts or a quick weeknight win!

For the Chicken:

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

  • 1/4 cup soy sauce

  • 2 tbsp teriyaki sauce

  • 1 tbsp sesame oil

  • 2 tbsp vegetable oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and pepper to taste

For the Fried Rice:

  • 3 cups cooked day-old rice

  • 2 tbsp vegetable oil

  • 2 eggs, beaten

  • 1/2 cup frozen peas and carrots

  • 1/4 cup chopped green onions

  • 2 tbsp soy sauce

  • Salt and pepper to taste

For the Vegetables:

  • 2 zucchinis, sliced into half-moons

  • 1 onion, sliced

  • 1 tbsp vegetable oil

  • Salt and pepper to taste


Instructions

  1. In a bowl, mix soy sauce, teriyaki sauce, sesame oil, garlic powder, onion powder, salt, and pepper. Add chicken and marinate for at least 20 minutes.

  2. Heat your Blackstone griddle (or skillet). Add vegetable oil and scramble the eggs. Push to the side.

  3. Add rice, peas and carrots, and green onions. Drizzle with soy sauce, season, and stir-fry for 5–7 minutes. Remove and set aside.

  4. In the same space, sauté zucchini and onion with oil, salt, and pepper until caramelized (about 5–7 minutes). Set aside.

  5. Turn up the heat, add the marinated chicken, and cook for 6–8 minutes or until browned and fully cooked.

  6. Serve chicken alongside fried rice and vegetables. Enjoy hot with optional dipping sauce!

Notes

Day-old rice works best for fried rice to avoid sogginess.
You can swap in shrimp or steak for the chicken.
Use pre-chopped veggies to save time on prep.
