Instructions

In a bowl, mix soy sauce, teriyaki sauce, sesame oil, garlic powder, onion powder, salt, and pepper. Add chicken and marinate for at least 20 minutes.
-
Heat your Blackstone griddle (or skillet). Add vegetable oil and scramble the eggs. Push to the side.
-
Add rice, peas and carrots, and green onions. Drizzle with soy sauce, season, and stir-fry for 5–7 minutes. Remove and set aside.
-
In the same space, sauté zucchini and onion with oil, salt, and pepper until caramelized (about 5–7 minutes). Set aside.
-
Turn up the heat, add the marinated chicken, and cook for 6–8 minutes or until browned and fully cooked.
-
Serve chicken alongside fried rice and vegetables. Enjoy hot with optional dipping sauce!
Notes
Day-old rice works best for fried rice to avoid sogginess.
You can swap in shrimp or steak for the chicken.
Use pre-chopped veggies to save time on prep.
