  • 1 tbsp olive oil, for sautéing and cooking

  • Burger buns, toasted

  • Toppings: arugula, sliced tomato, avocado, cheese, or creamy sauce


Instructions

  1. Prep the Black Beans: Drain and rinse the black beans until water runs clear.

  2. Sauté the Aromatics: In a skillet, heat 1 tablespoon olive oil. Add onion and garlic; cook until fragrant and soft, about 3–4 minutes.

  3. Mash and Mix: In a large bowl, mash the black beans with sautéed onion and garlic until mostly smooth but still slightly chunky.

  4. Add Spices and Binder: Mix in breadcrumbs, egg (or flaxseed), cumin, chili powder, salt, pepper, and cilantro until well combined.

  5. Shape Patties: Divide mixture into 4–6 equal portions. Shape into patties about 1 inch thick.

  6. Cook Burgers: Heat oil in a skillet over medium-high heat. Cook each patty for 4–5 minutes per side, until golden and crisp on the outside.

  7. Assemble and Serve: Toast buns, then layer with arugula, burger patty, creamy sauce, and toppings of your choice. Serve hot!
