1 1/2 cups old fashioned oats
1/2 cup all-purpose flour plus 2 tablespoons
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup butter, room temperature
1/2 cup Biscoff spread (cookie butter)
1/2 cup granulated sugar
1/2 cup light brown sugar
1 large egg
1/2 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large mixing bowl, beat butter, Biscoff spread, granulated sugar, and brown sugar on medium speed until smooth and creamy.
  4. Add egg and vanilla extract. Beat until fully combined.
  5. Reduce mixer speed to low and gradually add dry ingredients. Mix just until blended. Do not overmix.
  6. Chill dough in the refrigerator for 30 minutes.
  7. Scoop rounded tablespoons of dough and place 2 inches apart on prepared baking sheet.
  8. Bake for 8–10 minutes, until edges are golden and centers are just set.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
