Ingredients
Chicken Thighs
1 ½ pounds boneless, skinless chicken thighs
Kosher salt and pepper, to taste
1 teaspoon smoked paprika
1 teaspoon garlic powder
3 tablespoons apple cider vinegar
2 tablespoons hot honey (or regular honey for a mild version)
2 tablespoons BBQ sauce
Sesame seeds, for garnish
Citrus Slaw
1 small green cabbage, thinly sliced
2 carrots, shaved with a vegetable peeler
1 red onion, thinly sliced
⅓ cup chopped cilantro
¼ cup sliced almonds
1–2 oranges, segmented and chopped
2 tablespoons freshly squeezed lime juice
1 tablespoon honey
1 garlic clove, minced
Big pinch of kosher salt and pepper
¼ cup avocado oil
Instructions
Preheat broiler: Set your oven’s broiler to high and position a rack just beneath it.
Season chicken: Place chicken thighs on a baking sheet. Season well with salt, pepper, smoked paprika, and garlic powder.
Broil chicken: Broil for 6 minutes, flip, and broil another 6 minutes.
Make glaze: While chicken cooks, whisk hot honey, BBQ sauce, and apple cider vinegar in a bowl.
Glaze & broil: Brush the chicken with glaze and broil 1 more minute. Flip, glaze again, and repeat 1–2 more times for a nice char.
Make slaw: In a large bowl, combine cabbage, carrots, onion, almonds, cilantro, and oranges. In a separate bowl, whisk lime juice, honey, garlic, salt, and pepper. Slowly whisk in avocado oil until emulsified. Pour over slaw and toss to coat.
Serve: Slice the chicken and place over slaw. Garnish with sesame seeds and enjoy!
Notes
Not a fan of spice? Swap hot honey for regular honey to tame the heat.
Prep ahead: The slaw can be made a few hours in advance and stored in the fridge.
No broiler? Grill or sear the chicken on the stovetop instead.
