Description

These BBQ Chicken Quesadillas are the perfect blend of smoky barbecue flavor, melty cheddar cheese, and crispy golden tortillas. A quick and comforting dinner that’s family-friendly, budget-friendly, and bursting with bold flavor in every bite.


Ingredients

  • 2 cups cooked shredded chicken

  • 1/2 cup barbecue sauce

  • 2 cups shredded cheddar cheese

  • 4 large flour tortillas

  • 1/4 cup chopped green onions (optional)

  • 2 tablespoons olive oil


Instructions

  1. In a medium bowl, combine the shredded chicken and barbecue sauce until fully coated.

  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.

  3. Place one tortilla in the skillet. Sprinkle 1/2 cup shredded cheese over it.

  4. Spread 1/2 cup of the BBQ chicken mixture on top of the cheese, then add another 1/2 cup shredded cheese.

  5. Top with a second tortilla and cook for 3–4 minutes, or until the bottom is golden and the cheese begins to melt.

  6. Carefully flip the quesadilla and cook another 3–4 minutes until golden and fully melted.

  7. Remove from the skillet. Repeat with remaining tortillas and filling.

  8. Slice into wedges, garnish with green onions if desired, and serve warm.

Notes

Rotisserie chicken works great for this recipe.

Try pepper jack cheese for a spicy kick.

For easier flipping, use two spatulas or flip onto a plate first.

Serve with ranch, sour cream, or extra barbecue sauce for dipping.
