Ingredients
For the Flatbread Base:
- 2 large flatbreads (store-bought or homemade)
- 2 tablespoons olive oil
For the BBQ Chicken Topping:
- 1 ½ cups cooked chicken breast, shredded or diced
- ½ cup barbecue sauce (your favorite brand or homemade)
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ¼ small red onion, thinly sliced
- ½ cup fresh cilantro leaves, chopped (optional)
Optional Garnish:
- Drizzle of ranch dressing or extra BBQ sauce
- Sliced jalapeños for a spicy kick
Instructions
Preheat the Oven:
Preheat your oven to 400°F (200°C). Place a baking sheet or pizza stone in the oven to heat up for a crispier base.Prepare the Flatbread Base:
Lightly brush both sides of the flatbreads with olive oil. This helps crisp up the crust and prevents sogginess.Prepare the BBQ Chicken Mixture:
In a bowl, mix the shredded chicken with ¼ cup of the barbecue sauce until evenly coated.Assemble the Flatbread:
Spread a thin layer of barbecue sauce (the remaining ¼ cup) evenly over the surface of each flatbread. Top with the BBQ chicken mixture, spreading it out evenly. Sprinkle the shredded mozzarella and cheddar cheese over the chicken. Scatter the red onion slices over the cheese.Bake the Flatbread:
Place the assembled flatbreads on the preheated baking sheet or pizza stone. Bake for 10–12 minutes, or until the cheese is fully melted and bubbly, and the edges of the flatbread are golden brown.Finish and Serve:
Remove from the oven and let the flatbreads cool for 1–2 minutes. Sprinkle with fresh cilantro (if using) and drizzle with ranch dressing or extra BBQ sauce for added flavor. Slice into squares or wedges and serve immediately.
