Ingredients
For the Chicken Skewers:
- 1.5 lbs (680g) chicken breast or thighs, cut into bite-sized chunks
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8–10 wooden skewers (soaked in water for 20 minutes to prevent burning)
For the Bang Bang Sauce:
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust for spice level)
- 1 tablespoon honey (optional, for extra sweetness)
- 1 teaspoon lime juice
Optional Garnish:
- Chopped green onions
- Sesame seeds
Instructions
Prepare the Chicken:
In a large bowl, combine the chicken chunks, olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss well to coat the chicken evenly in the seasonings. Cover and marinate for 20-30 minutes, or overnight in the refrigerator for maximum flavor.Make the Bang Bang Sauce:
In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice until smooth. Taste and adjust the spiciness or sweetness to your liking. Set the sauce aside.Assemble the Skewers:
Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between each piece to ensure even cooking.Cook the Skewers:
- Grill Method: Preheat your grill to medium-high heat. Lightly oil the grates, then place the skewers on the grill. Cook for 8-10 minutes, turning occasionally, until the chicken is fully cooked and slightly charred.
- Stovetop Method: Heat a grill pan or skillet over medium-high heat. Add a little oil, then cook the skewers for 8-10 minutes, turning occasionally, until the chicken is golden brown and cooked through.
- Oven Method: Preheat your oven to 425°F (220°C). Place the skewers on a baking sheet lined with parchment paper or foil. Bake for 12-15 minutes, flipping halfway through, or until the chicken is fully cooked.
Coat with Bang Bang Sauce:
Once the chicken skewers are cooked, brush them generously with the Bang Bang sauce. You can also serve the sauce on the side for dipping.Garnish and Serve:
Sprinkle the skewers with chopped green onions and sesame seeds for extra flavor and presentation. Serve warm with extra Bang Bang sauce and your favorite sides, such as rice, salad, or grilled veggies.
Notes
- For extra juiciness, use chicken thighs instead of chicken breasts.
- To make it lighter, substitute Greek yogurt for mayonnaise in the sauce.
- Add some veggies like bell peppers, red onions, or zucchini to the skewers for added flavor and color.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or on the stovetop to maintain their flavor.
