For the Chicken:

  • 1 pound chicken breast or thighs, cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 large eggs, beaten
  • Vegetable oil, for frying

For the Bang Bang Sauce:

  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (or less for milder spice)
  • 1 tablespoon honey (or sugar, optional for added sweetness)
  • 1 teaspoon lime juice

For Garnish:

  • 2 green onions, sliced
  • Sesame seeds (optional)

Instructions

1. Prepare the Chicken:

  1. Cut the chicken into bite-sized pieces and pat them dry with paper towels. This helps the coating stick better.
  2. In a shallow bowl, mix the flour, cornstarch, salt, black pepper, garlic powder, and paprika.
  3. In another bowl, beat the eggs.

2. Coat and Fry the Chicken:

  1. Heat about 2 inches of vegetable oil in a deep skillet or frying pan to 350°F (175°C).
  2. Dip each piece of chicken into the egg mixture, then coat it in the flour mixture, pressing gently to ensure it’s evenly coated.
  3. Fry the chicken in batches for about 3–4 minutes per side, or until golden brown and fully cooked (internal temperature of 165°F). Remove and drain on paper towels or a wire rack.

3. Make the Bang Bang Sauce:

  1. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice until smooth. Adjust the spiciness by adding more or less sriracha.

4. Toss the Chicken:

  1. Place the fried chicken in a large bowl. Pour the bang bang sauce over the chicken and toss gently to coat every piece evenly.

5. Serve and Garnish:

  1. Transfer the chicken to a serving plate and garnish with sliced green onions and sesame seeds. Serve immediately!

Notes

  • Air Fryer Option: For a healthier version, air fry the chicken at 375°F (190°C) for 15–18 minutes, flipping halfway through. Spray with oil for extra crispiness.
  • Sauce Adjustments: If you prefer a tangier flavor, increase the lime juice. For more sweetness, add a little more honey or sugar.
