Description

These Baked Cranberry Brie Bites are the perfect holiday appetizer, with a delicious combination of creamy brie, sweet cranberry sauce, and crunchy pecans, all wrapped in flaky, buttery puff pastry. Quick and easy to make, they’re sure to impress your guests at any gathering.


Ingredients

  • 1 sheet puff pastry, thawed

  • 4 oz brie cheese, rind on, cut into 12 cubes

  • ½ cup cranberry sauce

  • 2 tbsp candied pecans, chopped (optional)

  • Fresh rosemary sprigs for garnish (optional)


Instructions

  1. Preheat & Prep: Preheat the oven to 375°F (190°C). Lightly grease a mini muffin tin with non-stick spray or line a baking sheet with parchment paper.

  2. Prep the Puff Pastry: Unfold the thawed puff pastry on a lightly floured surface. Roll it out slightly if needed, and cut it into 12 squares. Press each square gently into the muffin tin to form little pastry cups.

  3. Add the Filling: Place a cube of brie in the center of each pastry square. Top each with ½ teaspoon of cranberry sauce. Add chopped pecans if using, pressing them gently into the cranberry sauce to stick.

  4. Bake: Place the muffin tin in the oven and bake for 15-18 minutes, or until the pastry is golden brown and puffed up, and the cranberry sauce is bubbling.

  5. Garnish & Serve: Let the bites cool in the tin for 5 minutes before carefully removing them. Garnish with a small sprig of rosemary before serving.

Notes

Puff Pastry Tip: If your puff pastry gets too warm while handling, pop it in the fridge for a few minutes to make it easier to work with.
Storage: Leftover bites can be stored in an airtight container for up to 3 days in the fridge. Reheat in the oven for a few minutes to bring back the crispiness.
Customization: Feel free to substitute the cranberry sauce with fig jam or orange marmalade for a different flavor.
