For the Bundles

  • 1 pound fresh green beans, trimmed

  • 810 slices bacon, cut in half

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon pepper

Optional Glaze

  • 2 tablespoons brown sugar

  • 1 tablespoon soy sauce

  • ¼ teaspoon black pepper


Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Wash and trim green beans. Optional: Blanch beans for 2–3 minutes, then place in an ice bath and drain.

  3. Gather 6–8 beans into small bundles. Wrap each with ½ slice of bacon and secure with a toothpick if needed.

  4. Place bundles on a parchment-lined baking sheet. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper.

  5. If using the glaze, mix brown sugar, soy sauce, and black pepper, then drizzle it over the bundles.

  6. Bake for 25–30 minutes or until bacon is crispy and beans are tender. Broil the last 2–3 minutes for extra crispiness.

  7. Let cool briefly, then serve warm as a side dish or appetizer.

  • Thin-cut bacon works best—cooks faster and crisps beautifully.

  • Can be assembled ahead and refrigerated until baking.
