Description

This Authentic Greek Chicken Souvlaki is a flavorful, easy-to-make dish featuring tender grilled chicken marinated in lemon, garlic, and herbs. Perfect for weeknights, BBQs, or family meals, it brings the vibrant taste of the Mediterranean straight to your table!


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into chunks

  • 1/4 cup olive oil

  • 1/4 cup lemon juice

  • 4 cloves garlic, minced

  • 1 tablespoon dried oregano

  • 1 teaspoon dried thyme

  • Salt and pepper, to taste

  • 1 red onion, cut into chunks

  • 1 red bell pepper, cut into chunks

  • 1 green bell pepper, cut into chunks

  • Wooden skewers, soaked in water for 30 minutes


Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.

  2. Add chicken chunks to the marinade and toss to coat. Cover and refrigerate for at least 1 hour (or overnight for deeper flavor).

  3. Preheat grill to medium-high heat.

  4. Thread marinated chicken onto soaked wooden skewers, alternating with red onion and bell pepper pieces.

  5. Grill skewers for 8–10 minutes, turning occasionally, until chicken is cooked through and vegetables are slightly charred.

Notes

Soaking the skewers prevents burning on the grill.
For added flavor, serve with lemon wedges and a sprinkle of fresh parsley.
You can substitute chicken thighs for a juicier result.
