1.5 lbs boneless, skinless chicken thighs or Breast

1 cup apple cider

3 garlic cloves, minced

2 tbsp honey

2 tbsp Dijon mustard

2 tbsp balsamic vinegar

1 tsp fresh thyme, chopped

Salt and pepper, to taste
Instructions

Preheat & Prep: Preheat oven to 400°F (200°C). Lightly grease a baking dish.

Season Chicken: Pat chicken dry, then season both sides with salt and pepper. Arrange in the baking dish.

Make the Glaze: In a bowl, whisk together apple cider, honey, Dijon mustard, garlic, balsamic vinegar, and thyme until smooth.

Coat the Chicken: Pour the glaze evenly over the chicken thighs.

Bake: Place in the oven and bake for 25–30 minutes, or until internal temperature reaches 165°F (75°C).

Rest & Serve: Remove from oven and let rest for 5 minutes. Drizzle remaining glaze over top before serving.
Notes
You can substitute apple juice for cider for a slightly sweeter flavor.
For a thicker glaze, simmer leftover sauce in a pan for 3–5 minutes until reduced.
Pairs beautifully with mashed potatoes, roasted veggies, or wild rice.
