Chicken Sliders

  • 1.5 lbs. chicken tenders

  • 4 tbsp olive oil

  • 1 pack King’s Hawaiian slider rolls (or dinner rolls)

  • 1/4 head iceberg lettuce, shredded

  • Dill pickle slices (2 per sandwich)

Butter Topping

  • 1/4 cup melted butter

  • 1 tbsp fresh parsley, minced

  • 1 garlic clove, minced

Blackened Seasoning

  • 2 tbsp smoked paprika

  • 1 tbsp cayenne pepper

  • 1 tbsp onion powder

  • 1 tsp garlic powder

  • 1 tsp ground black pepper

  • 1 tsp sea salt

  • 1/2 tsp basil

  • 1/2 tsp oregano

  • 1/2 tsp dried thyme

Alabama White BBQ Sauce

  • 1 ¼ cup mayonnaise

  • 2 tbsp apple cider vinegar

  • 1 tbsp Dijon mustard

  • 2 tsp brown sugar

  • 2 tsp creamy horseradish

  • 2 tsp fresh lemon juice

  • 1 tsp Worcestershire sauce

  • 2 tsp hot sauce

  • 1 tsp cayenne pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and pepper to taste (about 1/2 tsp each)


Instructions

  1. Make the Sauce:
    In a medium bowl, whisk together all Alabama white BBQ sauce ingredients until smooth. Store in the fridge up to 3 days ahead.

  2. Mix the Seasoning:
    In a small bowl or jar, combine all the blackened seasoning ingredients. Stir to mix well and set aside.

  3. Prepare the Chicken:
    Coat chicken tenders in 2 tbsp olive oil. Rub blackened seasoning generously over each tender.

  4. Cook the Chicken:
    Heat remaining 2 tbsp olive oil in a skillet over medium-high heat. Add chicken and cook for 3 minutes on each side, until cooked through and nicely blackened. Internal temp should reach 165°F.

  5. Toast the Buns:
    Mix melted butter with garlic and parsley. Turn oven to broil. Split slider buns and toast the bottoms under broiler until golden. Flip tops, brush with butter mix, and toast until lightly browned.

  6. Assemble Sliders:
    Layer chicken tenders, shredded lettuce, a spoonful of white sauce, and two dill pickles onto each bottom bun. Top with the toasted top bun. Slice and serve!

Notes

The white BBQ sauce is even better when made a day ahead!
You can substitute boneless chicken thighs for tenders if preferred.
For a milder version, reduce cayenne pepper in both the seasoning and the sauce.
